Preheat oven
to 375C. Scrub sweet potatoes and cut in half. Cut each half into 1/4"
strips. In a medium bowl, combine olive oil, salt, pepper, curry powder,
and cayenne pepper. Mix well. Add sweet potato strips to olive oil
mixture and stir with hands until sweet potatoes are evenly coated.
Spread on a cookie sheet and bake at 375C until tender. Serve hot.
Baked, not
fried, this sweet and spicy appetizer or snack is a low fat, nutrient
