Wash tomatoes
well and slice off tops. Set tops aside. Carefully scoop out pulp and
set aside. Heat olive oil in medium saucepan and sauté minced onion,
garlic, chopped chili peppers, salt, black pepper, cayenne, ginger,
cumin, and tofu. Add tomato pulp and cook for about 5 minutes. Stir in
nuts and mashed potatoes or cauliflower. Stuff tomatoes with filling and
attach tops with toothpicks. Steam in a medium saucepan with a
tight-fitting lid for about 10 minutes.
