Ingredients :
3 potatoes
1 tbsp chopped fresh mint and coriander, mixed
1 tsp mango powder
1 tsp salt
1 tsp crushed black peppercorns
1 fresh red chili, chopped
1 fresh green chili, chopped
4 tbsp margarine
Method :
Boil the potatoes until soft enough to be mashed.
Mash them down using a masher.
Blend together the chopped herbs, mango powder, salt, pepper, chilies and margarine to form a paste.
Stir the mixture into the mashed potatoes and mix together thoroughly with a fork.
Serve warm as an accompaniment.
Serves 4
Instead of potatoes, try sweet potatoes. Cook them until tender, mash and continue from step 2.
