Roughly chop the onion. In a mixing bowl,
combine the ground cumin and coriander, sesame seeds, chili powder,
garlic pulp, turmeric and salt. Mix well. Place all of these
ingredients, including the onion, in a food processor or blender and
process for 30-45 seconds. In a medium saucepan, heat the vegetable oil
and fry the spice mixture for about 5 minutes, stirring it occasionally
as it cooks. Add the quartered tomato, French beans, fresh fenugreek and
fresh chopped coriander. Stir-fry the mixture for about 5 minutes, then
sprinkle over the lemon juice, pour into a serving dish and serve
immediately.

"Masala" means spice and this vegetarian
dish is spicy, though not necessarily hot. You can adapt the spiciness
of the dish by using smaller or larger quantities of the spices, as you
wish. Serve it as an accompaniment to a meat dish with freshly cooked
basmati rice for a wonderful Indian meal.
If you can't find fenugreek leaves, use
5ml / 1 tsp fenugreek seeds instead.
