Heat oil in a
medium skillet. Sauté garlic, salt, and pepper until garlic is golden.
While garlic is sautéing, spread pine nuts on a cookie sheet and toast
at 375C for about 5 minutes. Stir toasted pine nuts into garlic mixture.
Remove form heat. Add soy cheese and stir until well mixed. Slice each
pepper lengthwise and stuff with cheese mixture. Bake at 375C in a glass
casserole for about 10 minutes, or until peppers are tender and cheese
is bubbly.
Hot and
spicy, these south of the border taste treats make perfect party
appetizers. Serve with crackers and lots of cold beverages !
