While the
potatoes are still warm, mash them in the pan until they are well broken
up. Add to the minced beef and mix well together. Finely the
chop the onion, spring onions and garlic. Add to the meat with the
ground nutmeg, coriander and cumin. Stir in enough beaten egg to give a
soft consistency which can be formed into fritters. Season to taste.
Heat the oil
in a large frying pan. Using a dessertspoon, scoop out 6-8 oval shaped
fritters and drop them into the hot oil. Allow to set, so that they keep
their shape (this will take about 3 minutes) and then turn over and cook
for a further minute. Drain well on
kitchen paper and keep warm while cooking the remaining fritters.
