5cm (2 inch) piece of fresh root ginger,
peeled and finely chopped
2 garlic cloves, finely chopped
1 tsp chili powder
2 tsp paprika
1.5kg (3 lb) boneless, skinless chicken

250ml (8 fl oz) natural yogurt

Method :
Heat the ghee
or vegetable oil in a deep frying pan. Add the onions, peppercorns,
cardamoms and cinnamon and fry until the onions are golden. Add the
ginger, garlic, chili powder, paprika and salt to taste and fry, stirring
occasionally, for 2 minutes.
Add
the chicken pieces and fry until browned. Gradually add the yogurt,
stirring constantly. Cover and cook gently for about 30 minutes.
