Wash and dice
green Chinese chives. Mix well with minced chicken and seasoning. To
prepare pastry, stir hot water into the flour and knead until smooth.
Divide the pastry dough into equal portions and pat to flatten them
lightly. Place filling on each piece of flattened dough. Seal well to
make patties. Heat oil in frying pan. Fry until both sides are golden
and done over medium heat. Serve hot.
Patties can
be served as snack at teatime or as a staple food in main meals. Flour
mixed with hot water gives a soft and manageable dough. Both deep frying
or pan frying wok fine in this recipe.
