2.5cm (1 inch) piece of fresh root ginger,
peeled and finely chopped
750g (1.5 lb) stewing steak, cubed
2 tbsp tomato puree
375g (12 oz) small new potatoes
4 green chilies

Method :
Heat the oil in
a large pan, add the onions and fry until lightly browned. Add the garlic,
chili powder, cumin, ground coriander and ginger and cook gently for 5
minutes, stirring occasionally. If the mixture becomes dry, add 2 tbsp of
water.
Add the cubes
of beef and cook, stirring, until browned all over. Add the tomato puree,
salt to taste and just enough water to cover the meat, then stir very
well. Bring to the boil, cover and simmer for about 1 hour, or until the
meat is almost tender. Add the potatoes and whole chilies and simmer until
the potatoes are cooked.
Serves 4
This is a really great way to make the
most of seasonal new potatoes. Make sure they are really small and all
of a similar shape and size so they are cooked at the same time.
