Cooking Tips for Chili :
- To bring out the flavor of chilies,
dry-roast them in a hot non-stick frying pan for a few minutes. Do not
allow them to change color.
- To reduce the heat of fresh or dried
chilies, soak them for an hour in a solution of wine vinegar and salt in
the ratio 3:1.
- If you bite into a chili that is
uncomfortably hot, swallow a spoonful of sugar. Don't be tempted to gulp
down a glass of water or beer; this will only succeed in spreading the
heat further.
